Baigan Tur dal

Ingredients

Brinjal -2(medium size)
Tur dal-1 cup
Onion -1(medium size)
Green chillies 3 (cut in to small pieces)
Coriander leaves(chopped)
Garlic 5 cloves and  Ginger 1"( ground together)
Cumin seeds -1tsp
Mustard seeds-1/4tsp
Dhania  -2tsp
Red chillies -2
Hing -a pinch
Turmeric powder - a pinch
Oil
Salt according to taste

Method

  1. Roast the tur dal a little about 1min.
  2. Cook the dal in the pressure cooker for about 2mins or one whistle
  3. In a heavy bottomed pan fry red chillies, cumin and Dhania seed and grind them to fine powder.
  4. In a heavy bottomed pan put 2 spoons of oil add mustard seeds,cumin seeds hing turmeric powder
  5. When they splutter add  green chillies, onion ,and brinjal stir  well. let it cook for about 3mins
  6. Then add tur dal, add salt
  7. Cook for about 15 to 20 minutes 
  8. Simmer add coriander leaves cook for about a min
  9. U can garnish with grated coconut. this goes well with Chapati, and jawar Roti.
